Twist on classic mac

Feeling adventurous?  Let's just say, Nick made a comment a couple days ago about me not making elaborate dinners anymore, and today I decided to let him eat his words.....haha literally.  So, I spent two hours in the kitchen whipping up a fabulous dinner.  Fried mac'n'cheese, breaded chicken and garlic breadsticks.  Oops, forgot a veggie, oh well.

So, the fried mac'n'cheese.  Probably the most ridiculous thing I have ever cooked, but I got my inspiration from a food network challenge.  I started with 3 tbsps of butter, melted that in a sauce pan, then added a couple leaves of cilantro and a handful (small one) of chopped green onions.  Sauteed that all together before adding a couple shakes of parmesan cheese and three slices of gouda.  I melted that all together, using a spatula to keep it from burning, and then I added a package of velveeta processed cheese.  It was all I had, found it in the cupboard.  But!  When it was all melted together, it smelled amazing.  While this was going on, I had been boiling the noodles the velveeta came with.  When they were done, I mixed them with the cheese, spread it all into a greased 9x9 baking pan, covered it in tin foil and put it in the freezer for an hour and a half.  After it solidified, I pulled it out, cut 9 squares and fried them in butter, making sure to get it golden crispy on both sides.  Then I stacked them in twos with parmesan cheese in the middle and served it up.  Nick said it was best he's had at home ever.  Mmmm.  Haha and while I was doing that, I was also breading and baking chicken, rising dough and baking bread sticks....yikes!  Poor Tristan was a little miffed at me for not paying attention to him, but he still had fun playing with his toys.
