I've decided, I'm not much of a fish person. Probably because the thought of blending it repulses me, and the smell precooking it terrible, and they are slimy. If there's one thing I can't stand, it's slime on my fingers. *shudders*
But! When my dad was visiting, he gave us two whole salmon fillets....and these things are huge. We added them to the two he had already given us, and there we were with four giant salmon fillets and no idea how to cook them. Still, we decided to be brave Sunday night, and invited Will and his fiance Emily to join us. Nick did the cutting, thank goodness, they were just too fishy for me (badum ching!).
In order to maximize our chance of success, we cooked the two fillets in three different ways. One we cut in half and covered each half with different spices to bake. One was old bay spice, chopped garlic and butter. The other was basil, garlic powder, whole onion rings and butter. Those baked for about an hour while we battered up and fried the rest. Nick cut little pieces for me to work with; I battered them in mayo/spicy mustard/egg goo, and then breaded them with dry potato flakes. Then we deep fried them in veggie oil (very NOT healthy, but apparently oh so tasty). One of the last things was baguette with cream cheese, mmmmm.
Nick had also been saying he wanted tartar sauce without the pickles, or little green things. Will had gone to the store while we were cooking to pick up some last minute things, like dill, but after mixing the dill and mayo and worchershire sauce, garlic, onion and cayenne pepper, something was still missing. The pickles. So when Nick wasn't looking, I sneaked a dollop of relish in and stirred it up. Will thought it was funny, especially when Nick said the tartar sauce was great. Of course we told him, and he said he would get me for it later. Still, dinner was a great success.
Then, when Nick went fishing with a couple friends visiting from Panama (more on their visit later!) he caught a brown trout. It ended up soaking in milk in our fridge for two days.....eww. Apparently that gets the slime off. Well, Nick decided to fry it up in butter and garlic, but still wasn't satisfied with how it turned out. So he cut all the meat off and asked me to help him bread and fry it up. They ended up looking like little chicken tenders, and smelled pretty good too. He ate a bunch but saved most of them for his friends to try.
Long story short, our house has smelled like fish for a few days, haha.
